Gingerbread Cookies
Spiced gingerbread cookies made with black treacle and ground ginger, delivering warm molasses depth with sharp spice notes. Serves 4.

Line the baking tray with a sheet of baking paper.


Tip the flour into the large mixing bowl.
Plain flour · 300 g
Add the ground ginger to the bowl.
Ground ginger · 2 tsp
Add the ground cinnamon to the bowl.
Ground cinnamon · 1 tsp
Add the ground cloves to the bowl.
Ground cloves · 0.25 tsp
Add the bicarbonate of soda to the bowl.
Bicarbonate of soda · 1 tsp
Add the salt to the bowl.
Fine salt · 1 pinch
Whisk everything together until the spices are evenly distributed through the flour.


Cut the butter into rough chunks and place them in the small saucepan.
Unsalted butter · 115 g
Add the dark brown sugar to the saucepan.
Soft dark brown sugar · 100 g
Spoon the black treacle into the saucepan.
Black treacle · 85 g
Set the saucepan over a low heat and stir gently until the butter has melted and the sugar has dissolved into a smooth, dark liquid, then remove from the heat.


Pour the hot treacle mixture over the spiced dry mixture in the large mixing bowl.

Stir vigorously with the wooden spoon until a rough, shaggy dough starts to come together.


Leave the dough for 5 minutes to cool until just warm, then crack the egg into the mixing bowl, discarding the shell.

Beat the egg into the dough until it is fully incorporated and the dough is smooth and cohesive.


Press a sheet of cling film directly onto the surface of the dough.


Place the bowl in the refrigerator to chill.


Leave the dough to chill for at least 1 hour until it is firm enough to roll.

Set the oven to 180 °C and allow it to heat fully before baking.

Take the bowl of chilled dough out of the refrigerator.


Peel away and discard the cling film from the surface of the dough.


Turn the chilled dough out onto the chopping board.

Dust the surface lightly with a little flour and roll the dough out to about 4 mm thickness, turning it a quarter-turn after each pass to keep it even.

Press a cookie cutter firmly down through the dough and lift out the shapes, re-rolling any scraps and cutting again until all the dough is used.


Lay the cut shapes on the lined baking tray, spacing them about 2 cm apart.

Slide the baking tray into the oven.



Bake for 10 minutes, until the cookies are set at the edges and just firm to the touch.


Using oven gloves, lift the tray carefully out of the oven and set it on a heatproof surface.



Leave the cookies on the tray for 5 minutes to firm up before moving them.

Slide a palette knife under each cookie and transfer them to the wire rack to finish cooling completely.


Leave the cookies on the rack until completely cool and crisp throughout.
