Heat the oven to 220 °C so it is thoroughly hot before the aubergines go in.

Cut each aubergine lengthways into slices about 1 cm thick.

Transfer the aubergine slices into the large bowl.

Pour the olive oil over the aubergine slices in the bowl.
Extra-virgin olive oil · 60 ml
Sprinkle the salt over the aubergine slices.

Turn the slices over with tongs until every piece is evenly coated in oil and salt.


Lay the aubergine slices in a single layer across the baking tray, fitting them as closely as possible without overlapping.

Slide the baking tray into the oven.



Roast the aubergine slices until they are deeply golden and completely tender, turning them once halfway through.

Lift the baking tray out of the oven using oven gloves and set it aside to cool slightly.



Peel the outer skin from the red onion and halve it through the root.

Finely chop the peeled red onion halves into small, even pieces.


Scrape the chopped onion into the large heavy-based saucepan.

Peel the papery skin from each garlic clove.

Rock the knife over the peeled cloves, chopping them to a fine mince.


Add the minced garlic to the saucepan with the onion.

Pour the remaining olive oil into the saucepan.

Set the pan over a medium heat and cook, stirring occasionally, until the onion is completely soft and translucent but not coloured.


Add the lamb mince to the pan, breaking it apart with the spoon.
Minced lamb · 600 g

Cook over a high heat, breaking up any lumps with the spoon, until the mince is evenly browned and any liquid has evaporated.


Stir the tomato paste directly into the browned mince.
Tomato paste · 2 tbsp
Stir and cook for two minutes until the paste darkens slightly and coats the meat.


Pour the red wine into the pan, scraping any browned bits from the base.
Dry red wine · 125 ml
Tip in the canned chopped tomatoes and stir to combine.

Sprinkle in the ground cinnamon.
Ground cinnamon · 1 tsp
Add the ground allspice.
Ground allspice · 0.5 tsp
Crumble in the dried oregano between your fingers as you add it.
Dried oregano · 1 tsp
Tuck in the bay leaves.

Season the sauce with ground black pepper.

Reduce the heat to low and simmer uncovered, stirring occasionally, until the sauce is thick and almost dry with very little liquid remaining.

Fish out both bay leaves from the meat sauce with a spoon and discard them.


Leave the meat sauce to cool in the pan while you make the béchamel.

Put the butter into the medium saucepan.
Unsalted butter · 50 g
Set the pan over a medium-low heat and let the butter melt completely without colouring.

Tip in all the flour at once.

Stir vigorously over the heat for about 90 seconds until the paste is smooth and smells faintly biscuity but has not browned.


Pour in the milk in a slow, steady stream.

Whisk constantly over a medium heat until the sauce is thick enough to coat the back of a spoon and no floury taste remains.


Grate a good pinch of nutmeg directly into the sauce.
Ground nutmeg · 1 pinch
Season the béchamel with the salt.

Add the ground black pepper and stir to combine.

Remove the pan from the heat and leave the béchamel to cool for five minutes, stirring occasionally to prevent a skin forming.

Drop the egg yolks into the slightly cooled béchamel.

Whisk the yolks in quickly until the sauce is smooth and glossy.


Set the oven to 180 °C ready for baking the moussaka.

Arrange half of the roasted aubergine slices in a single overlapping layer across the base of the deep baking dish, about 30 × 20 cm.
Spoon all of the cooled meat sauce evenly over the aubergine layer and press it down gently.
Lay the remaining roasted aubergine slices over the meat sauce in a neat, overlapping layer.
Pour the enriched béchamel sauce over the top layer of aubergine, spreading it to the edges with the back of a spoon so everything is covered.

Grate the kefalotyri cheese over the surface of the béchamel.

Bake until the top is deeply golden and the filling is bubbling at the edges, about 50 minutes.
Lift the dish out of the oven using oven gloves and place it on a heatproof surface.


Leave the moussaka to rest for at least 15 minutes so the layers firm up and it cuts cleanly.
