Place the flat-leaf parsley on the chopping board.
Flat-leaf parsley · 20 g
Pull the parsley leaves from their stalks, discarding the stalks, and pile the leaves on the chopping board.

Gather the parsley leaves into a pile and chop them finely until you have a bright green, even mince.

Scrape the finely chopped parsley into the small bowl.

Crush each garlic clove lightly with the flat of the knife, then pull away and discard the skin.
Garlic · 2 clove

Chop the peeled garlic cloves repeatedly, rocking the knife over them until they are minced as finely as possible.

Scrape the finely minced garlic into the bowl with the parsley.

Place the lemons on the chopping board.
Lemon · 2 piece
Hold each lemon under cold running water, rubbing the skin briefly, then pat dry and return to the chopping board.

Grate the zest of each rinsed lemon on a microplane, moving it in long strokes across the surface and stopping before you reach the white pith.

Tip the lemon zest into the bowl with the parsley and garlic.

Stir the finely chopped parsley, lemon zest and finely minced garlic together until evenly combined.

Spoon the gremolata into a small serving bowl, ready to scatter over braised meats or other dishes.
