Gulab Jamun
Gulab jamun are soft, milk-powder dough balls fried until deep reddish-brown, then soaked in a fragrant cardamom and saffron syrup perfumed with rose water. They are pillowy and tender at the centre, with a lightly yielding surface, and arrive at the table glistening in syrup, scattered with chopped pistachios and dried rose petals.
