Turn the oven to 180 °C and allow it to come fully up to temperature.

Lay the croissants on the chopping board.
Croissant · 4 piece
Cut each croissant almost all the way through horizontally, leaving a hinge at the back so the two halves stay joined.

Spoon the Dijon mustard into the small bowl.
Dijon mustard · 2 tbsp
Add the butter to the small saucepan.
Unsalted butter · 20 g
Set the saucepan over a low heat and stir gently until the butter is fully melted, then remove from the heat.

Pour the melted butter into the bowl with the mustard.

Stir the melted butter and mustard together until you have a smooth, even mixture.

Open each split croissant and arrange them cut-side up on the baking tray.

Brush the mustard butter generously over the cut surfaces of all four croissants.

Drape the slices of cooked ham evenly over the bottom halves of the croissants.
Cooked ham · 200 g
Grate the Gruyère directly over the ham on each croissant, distributing it evenly, then fold the tops back down.

Slide the baking tray into the oven.

Bake until the cheese is melted and bubbling and the croissants are deep golden and crisp, about 10 minutes.

Using oven gloves, take the tray out of the oven and rest it on the counter for a minute.
