Honey Garlic Salmon
Salmon fillets glazed with honey and soy sauce, caramelized with garlic and butter, finished with fresh parsley. Serves 4.

Finely zest the lemon into the small bowl, stopping before the white pith.

Halve the zested lemon and squeeze the juice into the same small bowl.


Add the honey to the bowl with the lemon zest and juice.

Pour the soy sauce into the bowl.

Stir everything together until the honey is fully dissolved into the sauce.


Crush each garlic clove with the flat of the knife to loosen the skin, then peel and discard the skins.

Mince the peeled cloves as finely as you can, rocking the knife back and forth until you have a fine paste.


Scrape the minced garlic into the sauce and stir to combine.

Press kitchen paper firmly over all sides of the salmon fillets to remove as much surface moisture as possible, then lay them in the (cold, dry) frying pan ready to season.

Sprinkle salt evenly over both sides of the salmon fillets in the pan.

Shake the ground black pepper evenly over both sides of the salted salmon fillets.

Lift the pepper-seasoned salmon fillets out of the pan and set them aside on the board while you heat the oil.

Pour the olive oil into the large frying pan.
Extra-virgin olive oil · 2 tbsp
Set the pan over medium-high heat and let the oil heat until it shimmers.

Lay the seasoned salmon fillets skin-side down in the hot oil, pressing each one gently for a few seconds so the skin makes full contact with the pan.

Leave the salmon completely undisturbed for 4 minutes so the skin crisps and the flesh turns opaque two-thirds of the way up the sides.

Slide a spatula under each fillet and flip it gently onto its flesh side.


Cook for 1 minute on the flesh side until just barely opaque at the centre.

Add the butter to the pan, letting it melt around the salmon.

Pour the honey garlic glaze over and around the salmon fillets.

Tilt the pan slightly and spoon the bubbling glaze continuously over the salmon for about 90 seconds until the sauce thickens to a syrupy coating and the salmon is cooked through.


Gather the parsley into a tight pile and chop it finely with a rocking motion until the leaves are very small.
