Hush Puppies
Crispy cornmeal fritters with finely diced white onion and buttermilk batter, fried until golden. Serves 4.

Set the oven to 100 °C so you can keep the finished hush puppies warm.

Peel away the papery outer skin of the onion and discard it.

Finely chop the peeled onion into very small dice, as even as you can manage.


Measure the yellow cornmeal into a large mixing bowl.

Add the plain flour to the cornmeal.

Add the baking powder to the bowl.

Add the salt to the bowl.

Add the sugar to the bowl.

Whisk the dry ingredients together until evenly combined with no streaks.


Tip the finely chopped onion into the dry mixture.

Crack the egg into a small bowl, discarding the shell.

Pour the buttermilk into the bowl with the egg.
Buttermilk · 240 ml
Whisk the egg and buttermilk together until smooth and uniform.


Pour the buttermilk mixture into the dry ingredients.

Stir everything together with a wooden spoon until just combined — stop as soon as no dry flour remains; do not overmix.


Pour the vegetable oil into a deep heavy-based saucepan to a depth of at least 6 cm.

Set the pan over a medium-high heat and bring the oil to 180 °C, checking with a thermometer.


Set a wire rack on the baking tray so excess oil drains away from the hush puppies.


Working in 3 batches of about six, spoon heaped tablespoonfuls of batter into the hot oil, taking care not to crowd the pan, and fry each batch for 3 minutes, turning once, until deep golden brown all over.


Lift the hush puppies out of the oil with a slotted spoon onto the rack, letting the excess oil drain back into the pan.



Keep each batch warm on the baking tray in the oven while you fry the next.



Once all batches are cooked, pull the baking tray out of the oven using oven gloves.
