Turn the oven to 220 °C (200 °C fan).

Line the baking tray with baking paper.


Tip the wholemeal flour into the large mixing bowl.

Add the bicarbonate of soda.

Add the salt and whisk to combine.

Pour in the buttermilk and mix quickly with your hand in broad sweeps, just until a rough dough comes together; do not overwork it.
Buttermilk · 400 ml
Turn the dough out onto the lined tray.

Pat it gently into a rough round about 18 cm across and 5 cm thick.

Cut a cross about 2 cm deep in the top, leaving the loaf joined at the base.


Using oven gloves, put the baking tray in the oven.



Bake for about 40 minutes, until deep golden and hollow-sounding when you tap the base.

Using oven gloves, lift the loaf onto the wire rack.


Leave to cool for at least 30 minutes before cutting.
