Put the mince in the large mixing bowl.
Minced beef / beef mince · 400 g
Add the breadcrumbs.
Fresh white breadcrumbs · 40 g
Add the parmesan.
Parmesan · 30 g
Crack in the egg.
Egg · 1 piece
Add the salt and mix well with the fork.
Salt · 0.5 tsp

Roll the mixture into about 30 small meatballs, each the size of a large marble, and put them on the large plate. Wash your hands.
Lay the onion on the chopping board.
White onion · 1 piece
Cut it in half through the root and peel off the skin.

Lay the carrots on the board.
Carrots · 2 piece
Pour the olive oil into the large saucepan.
Extra-virgin olive oil · 2 tbsp
Add the onion and carrot and fry over a medium heat for about 8 minutes, stirring now and then, until soft.

Pour in the stock.
Chicken stock · 1,500 ml
Bring to the boil.

Lower the meatballs into the broth one at a time on the spoon.

Simmer gently for 5 minutes, without stirring, so the meatballs firm up.

Add the pasta and simmer for about 9 minutes, stirring gently now and then, until the pasta is tender and a meatball reads 71 °C in the middle on a thermometer.

Add the spinach and stir gently until it wilts.
Baby spinach · 100 g

Scatter over a little more parmesan and serve.
Parmesan · 20 g
