Japchae (Korean Glass Noodles with Vegetables and Beef)
Korean glass noodles tossed with sautéed beef, spinach, carrots, peppers, and shiitake mushrooms in a sesame oil and soy sauce glaze, finished with toasted sesame seeds.
What you’ll doYou will marinate sliced beef for at least 15 minutes while you boil and season the glass noodles. In parallel, you'll blanch and squeeze spinach, cook thin egg sheets and slice them into strips, then stir-fry each vegetable and the beef separately in a single pan, seasoning as you go. Finally, you'll combine everything in one bowl with sesame oil, salt and white pepper, then plate it with egg strips, sesame seeds and spring onions.
