Peel the white onion, discarding the skin.

Roughly chop the peeled onion into large chunks.


Tip the chopped onion into the saucepan.

Crush each garlic clove flat with the side of the knife and pull away the skin.

Tip the chopped tomatoes and all their juice into the saucepan.

Pour the cider vinegar into the saucepan.

Add the soft brown sugar to the saucepan.

Add the celery seeds to the saucepan.

Add the cayenne pepper to the saucepan.

Stir everything together so the sugar and spices are evenly distributed through the tomatoes.


Bring the mixture to a full boil over high heat, stirring occasionally, then lower the heat so it simmers briskly, and cook until the tomatoes have completely collapsed and the onion is soft, about 5 minutes.

Continue to simmer the mixture over medium-low heat, stirring now and then to prevent sticking, until it has thickened and reduced by about a third, around 20 minutes.

Take the pan off the heat and blend the mixture thoroughly with a stick blender until completely smooth.


Set a sieve over a clean saucepan and press the blended ketchup through it with the back of a large spoon, discarding the seeds and skins left behind in the sieve.


Return the strained ketchup to a gentle simmer over medium heat, stirring frequently, until it reaches a thick, pourable consistency that coats the back of the spoon, about 15 minutes.

Remove the pan from the heat and leave the ketchup to cool to room temperature.

Pour the ketchup into a serving bowl ready to use.
