Tip the strawberries onto the chopping board.

Cut out the green stalk and white core of each with the tip of the paring knife.


Halve each strawberry through the tip.

Spoon the jam into the small saucepan.
Raspberry jam · 120 g
Warm over a low heat, stirring, until it loosens to a pourable sauce, then take it off the heat and leave it to cool to room temperature, about 15 minutes.


Pour the cream into the large mixing bowl.

Sift over the icing sugar.

Whisk until the cream holds soft peaks that just droop at the tip.


Tip the peaches into the sieve set over the sink.

Scoop 2 balls of ice cream into each of 4 tall sundae glasses.

Spoon the raspberry sauce over the ice cream, sharing it between the glasses.

Divide the strawberries between the glasses.

Pile the whipped cream high above the rim of each glass.

Scatter the nuts over the cream.
Perch 2 glacé cherries on top of each.
