Baked lasagne layered with beef and pork ragù enriched by dry red wine, bound with egg and Parmigiano-Reggiano.

Put the 00 flour in the large mixing bowl and make a well in the middle.

Break the eggs into the well.

Beat the eggs with the fork, drawing in the flour until it clumps.


Knead for about 8 minutes, until smooth and springy.

Cover the bowl with cling film.


Lay the onion on the chopping board.

Cut it in half through the root and peel off the skin.


Lay the carrot on the board.

Lay the celery on the board.
Celery stalk · 1 piece
Lay the garlic cloves on the chopping board.
Garlic clove · 2 clove
Crush each clove lightly with the flat of the knife and pull off the skin.


Pour the olive oil into the large flameproof casserole.
Extra-virgin olive oil · 3 tbsp
Heat over a medium heat.

Add the diced pancetta.
Pancetta · 80 g
Fry for about 4 minutes, until it gives up its fat.


Add the onion, carrot and celery.

Cook for about 8 minutes, stirring, until soft.


Add the garlic and stir for a minute.

Turn the heat up and add the beef mince.
Minced beef / beef mince · 400 g
Add the pork mince.
Minced pork / pork mince · 150 g
Cook for about 10 minutes, breaking it up, until the liquid has gone and the meat browns.


Stir in the tomato paste for a minute.
Tomato paste · 2 tbsp

Pour in the wine and scrape up the browned bits.
Dry red wine · 150 ml

Let it bubble until almost gone.

Add the tomatoes, crushing them with the spoon.
Canned whole peeled tomatoes · 400 g

Add the bay leaves.
Bay leaf · 2 piece
Add three-quarters of a teaspoon of salt.
Fine salt · 0.75 tsp
Add the pepper.
Ground black pepper · 0.25 tsp
Turn the heat to low and set the lid on slightly ajar.


Simmer for 1½ hours, stirring now and then, until thick.


Lift off the lid and fish out the bay leaves onto a small plate.



Throw them away.

Put 60 g of the butter in the medium saucepan.
Unsalted butter · 60 g
Melt over a medium heat.

Whisk in the flour and cook for a minute.
Plain flour · 60 g
Pour in the milk gradually, whisking until smooth.
Whole milk · 800 ml

Simmer for 5 minutes, whisking, until thick.


Add half a teaspoon of salt.
Fine salt · 0.5 tsp
Grate in the nutmeg and take off the heat.
Nutmeg · 0.25 tsp
Turn the oven to 180 °C (160 °C fan).

Fill the stockpot with 3 litres of water.
Water · 3,000 ml
Add the rest of the salt.

Bring to the boil.

Uncover the pasta dough and turn it out onto the counter.


Roll it out in quarters as thinly as you can, about 1 mm, so you can almost see the counter through it.


Cut into 12 sheets about 10 × 20 cm.


Slide 6 sheets into the boiling water, one at a time.

Cook for 1 minute.

Lift them out onto the tray in a single layer.

Cook for 1 minute.

Lift them onto the tray beside the first batch.

Butter the large baking dish, about 20 × 30 cm.
Unsalted butter · 10 g
Spread a thin layer of béchamel over the base.

Spoon over a third of the remaining béchamel.

Spread the rest of the ragù over.

Lay the last 4 sheets over.
Spread the rest of the béchamel over the top, right to the edges.

Put the Parmigiano in a second small bowl.

Grate it finely.


Scatter it over the top.
Using oven gloves, put the large baking dish in the oven.


Bake for about 40 minutes, until golden and bubbling at the edges.

Leave to rest for 15 minutes before cutting, so the layers hold.

Lasagne al Forno
Baked lasagne layered with beef and pork ragù enriched by dry red wine, bound with egg and Parmigiano-Reggiano.
What you’ll doYou will make a pasta dough and let it rest, then prepare a ragù of beef and pork and a béchamel sauce whilst the dough relaxes. You will roll the dough thin, cook the sheets briefly in boiling salted water, then layer them in a buttered dish with ragù, béchamel and Parmigiano in four alternating tiers. The assembled lasagne bakes until the top is deep golden and bubbling, then rests before serving.
