Slice the pork belly into rough chunks about 3 cm thick, keeping the fat and lean together.

Rock the knife back and forth over the pork slices, turning the board a quarter-turn every few strokes, until you have a coarse, uneven mince with visible flecks of fat — stop well before it becomes paste.


Scrape the chopped pork off the board into the large mixing bowl.

Finely chop the water chestnuts into small pieces roughly 3–4 mm across.

Tip the finely chopped water chestnuts into the bowl with the pork.

Peel the ginger with a peeler, scraping away all the papery skin.

Grate the peeled ginger on the fine side of the grater directly onto the board.


Scrape the grated ginger into the bowl.

Trim the root ends and any wilted outer leaves from the spring onions and discard the trimmings.
Spring onions · 4 piece

Strip away the outermost layer of each spring onion with the side of the knife and discard it.


Finely chop the spring onions, white and green parts alike, into small rounds.


Tip the finely chopped spring onions into the bowl.

Crack the egg into the bowl, discarding the shell.

Pour the Shaoxing rice wine into the bowl.

Add 2 tablespoons of the light soy sauce to the bowl.

Add the dark soy sauce to the bowl.

Add the ground white pepper to the bowl.

Add the sugar to the bowl.

Drizzle the sesame oil into the bowl.

Spoon the cornstarch into the bowl.

Add the salt to the bowl.

Stir and fold the mixture vigorously in one direction for about 90 seconds until it becomes sticky and cohesive.


With wet hands, divide the mixture into 4 equal portions and roll each into a large, smooth ball.

Pour the vegetable oil into the large frying pan.

Heat the oil over medium-high heat until it shimmers.

Lower the meatballs carefully into the hot oil and fry, turning them gently with a spoon, until they are golden brown all over.


Lift the browned meatballs out of the pan with a slotted spoon and set them aside on the plate.


Cut the napa cabbage crossways into wide ribbons about 5 cm across.

Add the water to the saucepan.

Add the remaining light soy sauce to the saucepan.

Scatter the sliced cabbage into the saucepan and spread it into an even layer.

Nestle the browned meatballs on top of the cabbage, pressing them down gently so they are half-submerged in the broth.

Bring the liquid to a boil over high heat.

Set the lid on the saucepan.

Reduce the heat to the lowest setting and simmer, covered, for 1 hour until the meatballs are completely cooked through and the cabbage has turned silky and tender.
