Malai Kofta
Crispy paneer and potato kofta in creamy tomato sauce with basmati rice.
What you’ll doYou will mash boiled potato with grated paneer, chilli, cornflour and spices, wrap the dough around a cashew and raisin stuffing and deep-fry 12 kofta in two batches. Blend onion, garlic, ginger, tomatoes and cashews, fry the purée with spices in butter and oil, simmer until thick and finish with cream and garam masala.
