Classic beef meatloaf bound with eggs and breadcrumbs, seasoned with Worcestershire sauce, mustard and thyme, under a sticky ketchup glaze. Serves 4.

Set the oven to 180 °C and let it come fully up to temperature.

Peel the papery skin from the onion and discard it.
Yellow onion · 1 piece

Finely chop the peeled onion into small, even pieces.


Tip the finely chopped onion into a large mixing bowl.

Peel the papery skin from each garlic clove.
Garlic · 2 clove

Mince the peeled garlic cloves as finely as you can, rocking the blade back and forth until no large pieces remain.


Scrape the minced garlic into the bowl with the onion.

Add the breadcrumbs to the bowl.
Breadcrumbs · 80 g
Pour the milk over the breadcrumbs so they begin to absorb it.
Whole milk · 80 ml
Crack the eggs into the bowl, discarding the shells.
Egg · 2 piece
Add the Worcestershire sauce to the bowl.
Worcestershire sauce · 1 tbsp
Add the Dijon mustard to the bowl.
Dijon mustard · 1 tsp
Crumble the dried thyme between your fingers as you add it to the bowl.
Dried thyme · 0.5 tsp
Add the salt to the bowl.
Salt · 1 tsp
Add the black pepper to the bowl.
Ground black pepper · 0.5 tsp
Stir everything in the bowl together with a fork until the wet ingredients are evenly combined.


Add the ground beef to the bowl.

Use your hands to combine the beef with the seasoned base, working it just until everything is evenly distributed — do not overwork or the loaf will be dense.

Line a 900 g loaf tin with a strip of baking paper, letting it overhang the long sides.


Transfer the meatloaf mixture into the lined loaf tin, pressing it in firmly so there are no air pockets.

Smooth the top of the meatloaf flat with a spatula.


Measure the ketchup into a small bowl.
Tomato ketchup · 60 ml
Add the brown sugar to the bowl.
Light brown sugar · 1 tbsp
Add the apple cider vinegar to the bowl.
Apple cider vinegar · 1 tsp
Stir the ketchup, sugar and vinegar together until the sugar has dissolved and the glaze is smooth.


Spoon the glaze evenly over the top of the meatloaf and spread it to the edges with the spatula.


Slide the loaf tin into the oven.



Bake until the meatloaf is cooked through and the glaze is set and sticky — a meat thermometer pushed into the centre should read 70 °C or more and stay there for 2 minutes.


Lift the loaf tin out of the oven using oven gloves and set it on the kitchen counter.



Leave the meatloaf to rest in the tin for 10 minutes so the juices settle and it firms enough to slice cleanly.

Lift the meatloaf out of the tin by the overhanging paper and set it on the chopping board, then peel away the paper.


Cut the meatloaf into thick slices with a single downward stroke of the knife for each cut.

What you’ll doYou will mix breadcrumbs, milk, eggs and seasonings into a base, fold in ground beef gently, press the mixture into a lined tin, top it with a ketchup glaze, and bake until the centre reaches 70 °C and holds it for 2 minutes.
