Miso-Glazed Salmon
Miso-glazed salmon fillet with mirin, sake, and soy sauce glaze, topped with fresh ginger and spring onions. Serves 4.

Spoon the miso paste into the small saucepan.
White miso paste · 80 g
Pour the mirin into the saucepan.
Mirin · 60 ml
Pour the sake into the saucepan.
Sake · 60 ml
Add the caster sugar to the saucepan.

Add the soy sauce to the saucepan.
Soy sauce · 15 ml
Peel the fresh ginger
Fresh ginger · 10 g

Grate the peeled ginger finely over the chopping board.


Scrape the grated ginger into the saucepan.

Crush each garlic clove flat with the side of the knife and slip off the skin.

Mince the peeled garlic cloves as finely as you can.


Scrape the minced garlic into the saucepan.

Drizzle the sesame oil into the saucepan.

Stir everything together until the miso is fully dissolved and the mixture is smooth.


Set the saucepan over medium heat and cook, stirring constantly, until the sugar has dissolved and the glaze thickens slightly and coats the back of the spoon, then remove from the heat.

Lay the salmon fillets skin-side down in the shallow dish.

Pour the miso glaze over the salmon fillets and turn each piece to coat it thoroughly on all sides.

Stretch cling film tightly over the dish to seal it.


Transfer the covered dish to the refrigerator.


Leave the salmon to marinate in the refrigerator for at least 2 hours, or overnight for the deepest flavour.

Take the dish out of the refrigerator and uncover it.


Preheat the oven

Line the baking tray with baking paper.


Lift each salmon fillet from the dish and lay it skin-side down on the lined baking tray, letting the excess glaze drip back.

Slide the baking tray into the oven using oven gloves.



Roast the salmon until the glaze is deeply caramelised and the fish flakes easily when pressed with a fork, about 10–12 minutes.



Remove the baking tray from the oven using oven gloves.



Cut away the root ends and any ragged green tips from the spring onions.

Strip away the one or two tough outer layers from each spring onion.


Slice the peeled spring onions thinly on the diagonal.

Miso-Glazed Salmon

What you’ll doYou will cook a miso glaze on the stovetop, coat raw salmon fillets with it, and marinate them for at least two hours or overnight in the refrigerator. After marinating, you will roast the fillets in a preheated oven until the glaze caramelises and the fish flakes easily, then garnish with sesame seeds and spring onions.
