Mulligatawny
Mulligatawny soup combines chicken thighs, coconut milk and mild curry powder with tomato paste and ground coriander over basmati rice for four servings.

Peel the onion, halve it through the root and lay it flat on the board.

Finely chop the onion into small, even pieces.


Tip the chopped onion into the saucepan.

Peel the carrots and trim off the tops and tips.

Finely chop the peeled carrots into small dice.


Tip the chopped carrots into the saucepan with the onion.

Trim and finely chop the celery sticks into small pieces.

Add the chopped celery to the saucepan.

Crush each garlic clove lightly with the flat of the knife to loosen the skin, then peel it away.
Garlic · 3 clove

Mince the peeled garlic cloves into a fine paste by rocking the knife back and forth over them.


Scrape the minced garlic into the saucepan.

Peel the ginger by scraping away the skin with the edge of a peeler.
Fresh ginger · 15 g

Grate the peeled ginger on the fine side of the grater into a small pile.


Scrape the grated ginger into the saucepan.

Add the butter to the saucepan with the vegetables.

Set the pan over a medium heat and stir the vegetables and butter together, cooking until the onion is completely soft and translucent, about 8 minutes.


Add the mild curry powder to the pan.

Add the ground cumin to the pan.

Add the ground coriander to the pan.

Add the ground turmeric to the pan.

Stir the spices into the vegetables and cook, stirring constantly, for about 90 seconds until the spices smell fragrant and coat everything in the pan.


Add the tomato paste to the pan.

Add the plain flour to the pan.

Stir the tomato paste and flour thoroughly into the spiced vegetables and cook for 1 minute, stirring, until the paste deepens in colour.


Add the chicken thighs to the pan, nestling them among the spiced vegetables.

Pour the water into the pan, stirring to lift the paste from the bottom.

Add the red lentils to the pan.

Add the salt to the pan and stir to combine.

Bring the soup to a full boil over a high heat, stirring occasionally and skimming any foam that rises to the surface.


Reduce the heat to low, partially cover the pan and simmer gently for 25 minutes, until the chicken is cooked through and the lentils have dissolved into the broth.

Lift the chicken thighs out of the soup with tongs and transfer them to the chopping board.


Use two forks to pull the chicken thighs apart into rough shreds, discarding any bones or skin.


Peel the apple, removing all the skin.

Quarter the apple and cut out the core from each piece.


Dice the apple quarters into small, roughly equal cubes.


Add the basmati rice to the pan.

Return the shredded chicken to the pan and stir it through the soup.

Simmer the soup over a low heat, uncovered, for 12 minutes, until the rice is tender and the apple has softened into the broth. Check the thickest piece reads 74 °C on a thermometer.


Halve the lemon and squeeze the juice into the small bowl, catching any pips.
