Tip the jasmine rice into a medium saucepan.
Jasmine rice · 400 g
Pour the water over the rice.
Water · 600 ml
Bring the water to a full boil over high heat, then immediately reduce the heat to the lowest setting.

Place the lid on the saucepan.


Cook the rice on the lowest heat for 18 minutes without lifting the lid, then remove from the heat and leave to steam, lid still on, for a further 10 minutes.

Lift the lid off the saucepan and set it aside.

Fluff the rice with a fork, then spread it out on a large tray and leave it to cool completely.


Place the tray of rice in the refrigerator to chill and dry out overnight.


Leave the rice in the refrigerator overnight so it dries out thoroughly — this is the key to non-clumpy fried rice.

Remove the rice from the refrigerator and set it aside.


Slice the chicken thighs into bite-sized pieces roughly 2 cm across.
Chicken thigh · 400 g

Peel the shallots and discard the skins.
Shallots · 6 piece

Finely chop the peeled shallots.


Sweep the chopped shallots into a small bowl.

Crush each garlic clove flat with the side of the knife and peel away the skin.

Finely chop the peeled garlic cloves.


Add the chopped garlic to the bowl of shallots.

Finely chop the red chillies, discarding the stalks.

Add the chopped chilli to the bowl of shallots and garlic.

Add the shrimp paste to the bowl.

Mash and stir everything together in the bowl until roughly combined into a coarse paste.


Slice the cucumber into thin rounds or half-moons.

Arrange the cucumber slices on a plate and set aside for serving.

Slice the tomatoes into wedges.

Add the tomato wedges alongside the cucumber slices.

Trim the roots and any ragged tops from the spring onions.
Spring onions · 4 piece

Strip away and discard any tired or papery outer layers from the trimmed spring onions.


Slice the spring onions thinly on an angle.


Sweep the sliced spring onions into a small bowl and set aside.

Pour a tablespoon of vegetable oil into a large non-stick frying pan.

Set the pan over medium-high heat until the oil is shimmering.

Crack the eggs one at a time directly into the hot oil.

Fry the eggs undisturbed until the whites are fully set and the edges are lacy and golden but the yolks are still runny. Use pasteurised eggs for runny yolks, or cook them 3 minutes more until firm.

Slide the fried eggs onto a plate and set aside.


Add the remaining vegetable oil to a large wok.

Place the wok over the highest heat and let the oil heat until it just begins to smoke.

Tip the chilli-shallot paste into the smoking-hot oil.

Stir-fry the paste constantly, pressing it against the wok, until it is deeply golden, fragrant and beginning to catch at the edges — about 90 seconds.


Add the chicken pieces to the wok and spread them out in a single layer.

Stir-fry the chicken over high heat, tossing it through the paste, until it is opaque and cooked through. Check the thickest piece reads 74 °C on a thermometer.


Add the raw prawns to the wok.

Stir-fry the prawns with the chicken until they are pink and just cooked through.


Add all the day-old rice to the wok, breaking up any clumps with the back of the spoon as you go.


Toss and stir-fry the rice vigorously over the highest heat, pressing it against the wok so every grain gets coated and starts to colour.


Drizzle the kecap manis around the edges of the wok and over the rice.

Add the fish sauce.

Add the soy sauce.

Add the white pepper.

Add a pinch of salt.

Toss everything together furiously over the highest heat until the sauces are absorbed and the rice is glossy, fragrant and flecked with colour.


Spoon the nasi goreng into a large serving bowl or divide among 4 individual plates.

Lay the cucumber slices and tomato wedges from the plate alongside the rice.

Place the fried eggs on top of the rice.
