Onion Rings
Crispy onion rings made with whole milk batter and sliced white onions, golden and tender inside. Serves 4.

Lay the onions on the chopping board.
White onion · 2 piece
Cut off the top of each onion and peel away the papery outer skins with the help of the knife.


Slice the peeled onions crossways into rounds about 1 cm thick, then separate each round into individual rings with your fingers.


Transfer the onion rings to the large bowl.

Scatter the flour over the onion rings.

Toss the rings with tongs so each one is evenly coated in flour.


Measure the remaining flour into the medium bowl.

Add the baking powder to the bowl.

Add the salt to the bowl.

Add the black pepper to the bowl.
Ground black pepper · 0.5 tsp
Crack the eggs into the bowl, discarding the shells.

Pour the milk into the bowl.
Whole milk · 240 ml
Whisk everything together until you have a smooth, lump-free batter.


Drop the flour-dusted rings into the batter and turn them with tongs until every ring is coated.


Pour the vegetable oil into the large deep saucepan.
Vegetable oil · 1,000 ml
Heat the oil over medium-high heat until it reaches 180 °C on a thermometer.


Lay a sheet of kitchen paper on the plate to absorb excess oil.


Lift a third of the battered rings out of the batter, letting the excess drip off, lower them into the hot oil and fry for 2–3 minutes, turning once, until deep golden and crisp.


Put the first batch on the paper-lined plate with tongs to drain.


Lower half of the remaining battered rings into the hot oil, letting the excess batter drip off first, and fry for 2–3 minutes, turning once, until deep golden and crisp.


Lift the second batch out with tongs onto the plate beside the first.


Lower the last battered rings into the hot oil and fry for 2–3 minutes, turning once, until deep golden and crisp.


Lift the last batch out with tongs onto the plate with the others.


Turn off the heat and set the pan aside at the back of the hob; throw the oil away after the meal, once it is cold.

What you’ll doYou will peel and slice onions into rings, dust them with flour, then prepare a batter of flour, baking powder, eggs and milk. Heat oil to 180 °C, dip each floured ring into the batter and fry in batches for 2–3 minutes until golden and crisp, turning once. Drain on kitchen paper and serve hot.
