Pour the water into the large stockpot.

Add the salt to the water.

Bring the water to a rolling boil over high heat.

Cut away the thick woody stem and divide the head into small florets, halving any large ones so they are bite-sized.
Broccoli · 400 g

Add the broccoli florets to the boiling salted water.

Boil the broccoli for 3 minutes until just tender but still bright green.

Lift the broccoli out with a slotted spoon into the colander, leaving the cooking water in the pot, and keep the pot on the heat.


Crush each clove lightly with the flat of the knife to loosen the skin, then peel it away.

Pour the olive oil into the large wide frying pan.
Extra-virgin olive oil · 60 mlSet the pan over medium heat and warm the oil until it shimmers.
Squeeze the sausage meat from its casings directly into the hot pan, discarding the skins.
Italian pork sausages · 400 gBreak the meat into rough pieces with the wooden spoon and fry, stirring occasionally, until golden brown all over.

Add the finely chopped garlic to the pan with the browned sausage.
Scatter the chilli flakes into the pan.
Chilli flakes · 1 tspStir everything together and cook for 1 minute until the garlic is golden and fragrant.

Tip the drained parboiled broccoli into the frying pan.
Press down on some of the broccoli with the spoon to break it into the sauce, leaving some florets whole, and stir everything together over medium heat for 3 minutes. Check the centre of the largest one reads 71 °C on a thermometer.


Add the orecchiette to the boiling salted water.

Cook the orecchiette, stirring occasionally, until al dente — 1 minute less than the packet time.

Ladle a generous cupful of the starchy cooking water from the pot into the jug and set it aside.


Carefully tip the orecchiette into the colander to drain, using oven gloves.


Tip the drained orecchiette into the frying pan with the sausage and broccoli base.
Pour in a good splash of the reserved pasta cooking water.
Toss everything together vigorously over high heat for 1 minute, adding a little more reserved pasta water from the jug if needed, until the pasta is glossy and well coated.

Season with salt, tossing briefly to distribute it evenly through the pasta.

What you’ll doYou will boil salted water, parboil broccoli until bright green, then set it aside. Fry sausage meat broken from its casings until golden, add garlic and chilli flakes, then fold in the broccoli and break some of it down. Cook orecchiette al dente in the same water, reserve some cooking liquid, then toss everything together over high heat with the reserved water until glossy and coated. Season, transfer to a bowl, and finish with grated cheese.
