Lay the onion on the chopping board.

Cut it in half through the root and peel off the skin.


Lay the carrot on the board.

Lay the garlic cloves on the chopping board.

Crush each clove lightly with the flat of the knife and pull off the skin.


Put the finely grated lemon zest in a second small bowl.

Lay the parsley on the board.
Flat-leaf parsley · 20 g
Chop the leaves and tender stalks finely.


Spread the flour on the plate.
Plain flour · 60 g
Add 1 teaspoon of the salt.
Fine sea salt · 1 tsp
Add ½ teaspoon of the pepper and mix with the fork.
Ground black pepper · 0.5 tsp

Turn the oven to 160 °C (140 °C fan).

Lay the 4 cross-cut veal shanks, about 4 cm thick and 1.2 kg in all, on the tray.
Pat them dry with kitchen paper.

Turn them until coated all over and shake off the excess.


Pour the olive oil into the large flameproof casserole.
Extra-virgin olive oil · 60 ml
Add 30 g of the butter.

Heat over a medium-high heat until the butter foams.

Sear for 3–4 minutes a side, without moving, until deep golden.


Add the remaining 30 g of butter and turn the heat to medium.

Cook for about 7 minutes, stirring, until soft and lightly golden.


Stir for a minute, until fragrant.


Add the bay leaves.

Pour in the wine and scrape up the browned bits.
Dry white wine · 250 ml

Bubble over a medium-high heat for about 4 minutes, until reduced by half.

Add the chopped tomatoes.

Pour in the stock.

Add the rest of the salt.

Add the remaining ¼ teaspoon of pepper.

Nestle the shanks back in, in one layer, so the sauce comes most of the way up.


Bring to a simmer.

Cover with the lid.


Using oven gloves, put the casserole in the oven.



Braise for 1½ hours, until the meat is falling from the bone.

Using oven gloves, take the casserole out.



Lift off the lid, keeping your face back from the steam, and fish out the bay leaves and thyme stalks onto a small plate.



Throw them away.
