Spoon the dark soy sauce into the small bowl.

Add the light soy sauce.

Add the oyster sauce.

Add the sugar.

Put the noodles in the large bowl.
Sen yai fresh wide rice noodles · 300 g
Peel the noodle sheets apart gently with your fingers so they do not clump in the wok.

Put the Chinese broccoli in the colander.
Chinese broccoli · 150 g
Rinse it under cold running water and shake it dry.

Lay the broccoli on the chopping board.

Cut off the tough ends of the stems.


Slice the stems thinly on the diagonal and cut the leaves into 5 cm pieces.


Lay the garlic cloves on the chopping board.
Garlic clove · 4 clove
Crush each clove lightly with the flat of the knife and pull off the skin.


Lay the chicken breast on the chopping board.
Chicken breast · 250 g
Slice the chicken thinly against the grain.


Pour a tablespoon of the oil into the wok.
Vegetable oil · 1 tbsp
Heat over a high heat until the oil just smokes.


Stir-fry for about 4 minutes, until cooked through with no pink left. Check the thickest piece reads 74 °C on a thermometer.


Pour another tablespoon of oil into the wok.

Heat over a high heat.


Stir-fry for 20 seconds, until fragrant.


Add the Chinese broccoli.

Stir-fry for about 2 minutes, until the stems are just tender and the leaves have wilted.


Push the broccoli to one side and pour the last tablespoon of oil into the empty space.

Crack the eggs into the oil, discarding the shells.

Let the eggs set for a few seconds, then scramble them roughly and mix them through the broccoli.


Toss for about 2 minutes, letting the noodles sit against the hot wok now and then so they char in places.


Toss until the chicken is hot again.

What you’ll doYou will stir-fry sliced chicken in a smoking wok and set it aside, then cook garlic and Chinese broccoli and scramble two eggs into them. Wide rice noodles go in with a sweet soy and oyster sauce and are left to char against the wok before the chicken goes back in.
