Tip the spinach into a colander.
Spinach · 500 g
Run cold water over the spinach, turning the leaves to wash them thoroughly.

Pour the water into a large saucepan and bring to a boil over high heat.
Water · 200 ml
Bring the water to a rolling boil over high heat.

Add the rinsed spinach to the boiling water.

Blanch the spinach, pressing it under the water, until every leaf is wilted and bright green.

Drain the spinach through the colander, then run cold water over it immediately to stop the cooking and fix the colour.

Transfer the cooled spinach into a blender.

Blend the spinach to a smooth, vivid-green puree, scraping down the sides once.

Peel the onion and halve it through the root.
White onion · 200 g

Finely chop the onion into small, even pieces.


Scrape the chopped onion into a small bowl and set aside.

Crush each garlic clove under the flat of the knife to loosen the skin, then peel away the skins.
Garlic · 6 clove

Mince the garlic to a fine paste, rocking the knife back and forth across the board.


Scrape the minced garlic into a second small bowl.

Scrape the skin off the ginger with the edge of a peeler.
Ginger · 30 g

Mince the ginger as finely as you can, then scrape and chop through the pile a few extra times.


Add the minced ginger to the bowl with the garlic and stir them together.

Trim the stalks from the green chillies.
Green chilli · 2 piece

Finely chop the chillies, keeping the seeds in for heat.


Add the chopped chilli to the garlic-ginger bowl.

Roughly chop the tomatoes into small chunks, discarding the core ends.
Plum tomatoes · 300 g

Transfer the chopped tomatoes to a third small bowl.

Place the block of paneer on the chopping board.
Paneer · 400 g
Cut the paneer into 2 cm cubes with firm, decisive strokes of the knife.


Transfer the cubed paneer to a fourth small bowl and set aside.

Spoon the ghee into a large heavy-based saucepan.
Ghee · 60 ml
Set the pan over medium-high heat and let the ghee melt and shimmer.

Add the cumin seeds to the hot ghee.
Cumin seeds · 1 tsp
Drop in the bay leaves.
Bay leaf · 2 piece
Let the cumin seeds and bay leaves sizzle and pop for about 30 seconds until the seeds are a shade darker and fragrant.

Tip in all the finely chopped onion.

Cook the onion, stirring regularly, until it is deeply golden and soft, about 10 minutes.


Add the garlic, ginger and green chilli mixture to the pan.

Stir and fry for 2 minutes until the raw smell of the garlic and ginger has completely gone.


Add the chopped tomatoes to the pan.

Cook, stirring and pressing the tomatoes down with the spoon, until they have completely broken down and the ghee begins to separate at the edges of the masala, about 8 minutes.


Add the ground coriander to the masala.

Add the ground turmeric.

Add the Kashmiri red chilli powder.

Stir the ground spices thoroughly into the masala and cook for 1 minute so they lose their raw flavour.


Add the salt and stir it in.

Pour the spinach puree into the pan.

Stir everything together until the spinach and masala are fully combined into a thick, unified sauce.


Reduce the heat to medium-low and let the sauce simmer gently for 5 minutes to deepen the flavours.

Gently slide the cubed paneer into the sauce.

Fold the paneer through the sauce carefully so each cube is coated without breaking.


Simmer gently for 5 minutes so the paneer absorbs the flavours and warms right through.

Pour the double cream in a slow circle around the pan.

Rub the kasuri methi between your palms directly over the pan so it releases its aroma, then let it fall in.

Sprinkle in the garam masala.

Stir everything together gently and cook for 1 final minute until the cream is fully incorporated and the sauce is glossy.
