Place the aubergines on the chopping board.
Aubergine · 800 g
Cut each aubergine into rounds about 2 cm thick.


Transfer the aubergine rounds to the colander set over the sink.

Sprinkle the coarse sea salt over the aubergine rounds and toss to coat.

Leave the salted aubergine to drain in the colander for 30 minutes until moisture beads on the surface.

Lift the drained aubergine rounds out of the colander and spread them in a single layer on the chopping board.

Brush any loose salt off the drained aubergine rounds, then press them firmly with kitchen paper to blot away all surface moisture.


Pour the olive oil into the large frying pan.

Set the pan over a medium-high heat and warm the oil until it shimmers.

Lay half the dried aubergine rounds into the hot oil in a single layer; they fry in 2 batches.

Fry the aubergine for about 4 minutes per side, turning once with tongs, until deep golden and tender all the way through, then fry the second half the same way.



Lift the golden fried aubergine rounds out of the pan with tongs and lay them on the plate.


Place the garlic cloves on the chopping board.

Crush each clove lightly with the flat of the knife to loosen the skin, then peel it away.


Chop the peeled garlic cloves as finely as you can into a uniform mince.


Pour the olive oil into the large heavy-based saucepan.

Set the pan over a medium-low heat and warm the oil gently.

Scrape the finely chopped garlic into the warm oil.

Stir the garlic constantly over a medium-low heat for about 90 seconds until it is pale gold and fragrant — do not let it brown.


Tip the canned whole peeled tomatoes into the pan, crushing each one between your fingers as it goes in.

Season the tomatoes with the fine sea salt and stir to combine.

Simmer the sauce uncovered over a medium heat, stirring occasionally, for about 20 minutes until it has thickened and the oil has risen to the surface.


Add a pinch of ground black pepper to the sauce and stir it through.

Pour the water into the large stockpot.

Bring the water to a rolling boil over the highest heat.

Add the coarse sea salt to the boiling water and stir until dissolved.

Pour the rigatoni into the salted boiling water.

Cook the rigatoni, stirring once or twice, for 1 minute less than the packet's al dente time.


Tip the rigatoni into the colander and drain quickly, reserving a ladleful of cooking water in a cup before you drain.


Tumble the drained rigatoni straight into the tomato sauce.

Toss the rigatoni vigorously in the sauce over a medium heat for about 1 minute, adding a splash of the reserved pasta water if it looks tight, until every tube is glossy and well coated.


Drizzle the remaining olive oil over the pasta and toss once more to finish.

Spoon and pour the sauced rigatoni into the large serving bowl.

Lay the golden fried aubergine rounds over and around the pasta, nestling them in generously.


Grate the ricotta salata over the top in a generous, even snow.
