Lay the onion on the chopping board.
White onion · 1 piece
Cut it in half through the root and peel off the skin.

Lay the garlic cloves on the chopping board.
Garlic · 2 clove
Crush each clove lightly with the flat of the knife and pull off the skin.

Lay the rosemary leaves on the board.
Fresh rosemary · 1 tsp
Pour the olive oil into the large saucepan.
Extra-virgin olive oil · 3 tbsp
Add the onion, garlic and rosemary.

Fry over a medium heat for about 8 minutes, stirring now and then, until soft.

Tomato purée · 1 tbsp

Tip in the chickpeas.
Tinned chickpeas · 800 g
Pour in the stock.
Vegetable stock · 1,000 ml
Bring to the boil.

Turn the heat down and simmer for 10 minutes, stirring now and then.

Blend about a third of it with the stick blender, leaving the rest of the chickpeas whole.

Ground black pepper · 1 pinch

Scatter over the parmesan and serve.
