Crispy waxy potatoes coated in spiced tomato sauce, seasoned with hot and smoked paprika for depth.

Set the oven to 220 °C and allow it to come fully up to temperature.

Peel the potatoes, removing all the skin, and lay them on the board.

Cut the peeled potatoes into rough 3 cm chunks, aiming for even pieces so they roast at the same rate.


Tip the potato chunks onto the baking tray and spread them out in a single layer.

Drizzle 60 ml of the olive oil evenly over the potatoes.

Sprinkle ½ tsp of the salt over the oiled potatoes.

Turn the potatoes with tongs until every piece is glossed with oil and salt.


Slide the baking tray into the oven.



Roast the potatoes for 40 minutes, turning once halfway through, until they are deeply golden and crisp on the outside and tender within.


Pull the baking tray from the oven using oven gloves and set it aside.



Crush each garlic clove under the flat of the knife, then slip off and discard the skin.

Finely chop the peeled garlic cloves into a fine mince.


Pour 30 ml of the olive oil into the small saucepan.

Warm the oil over a medium heat until it shimmers.

Tip the finely chopped garlic into the hot oil.

Stir the garlic constantly over a medium heat for about a minute until it is soft and pale golden but not browned.


Add the smoked paprika to the pan.

Add the hot paprika to the pan.

Add a pinch of cayenne pepper to the pan.

Stir the spices into the garlic oil and cook for 30 seconds until fragrant, letting the heat bloom the paprika without burning it.


Tip the plum tomatoes into the pan, crushing them with the back of the spoon as they go in.

Add the white wine vinegar to the tomato mixture.

Add the remaining ½ tsp of salt to the sauce.

Let the sauce simmer uncovered over a medium-low heat for 15 minutes, stirring occasionally, until it is thick, deep red and no longer watery.

Stir in the remaining 30 ml of olive oil to give the sauce a glossy, rich finish.

Transfer the golden roasted potatoes onto a large serving plate, arranging them in a single crowded layer.


Spoon the hot bravas sauce generously over the potatoes, letting it pool around and coat them.

Patatas Bravas
Crispy waxy potatoes coated in spiced tomato sauce, seasoned with hot and smoked paprika for depth.
What you’ll doYou will roast peeled potato chunks in a hot oven for 40 minutes whilst you make a paprika and tomato sauce on the stovetop. The sauce simmers for 15 minutes. Both finish at nearly the same moment, then you plate the potatoes and pour the sauce over them hot.
