Tip the split green peas into the large bowl.

Pour the cold water over the peas so they are covered by at least 5 cm.

Tip the peas and their soaking water into the colander in the sink and let the water run away.

Lay the garlic cloves on the chopping board.

Crush each clove under the flat of the knife to loosen the skin, then peel it away.


Lay the onion on the chopping board.

Cut the onion in half through the root and peel off the papery skin.


Chop the onion halves into small, even pieces.

Lay the carrots on the chopping board.

Cut the carrots into small, even dice.


Add the carrot to the onion in the bowl.

Lay the celery sticks on the chopping board.

Add the celery to the onion and carrot in the bowl.

Lower the smoked ham hock into the stockpot.

Tip the drained peas into the pot around the ham hock.

Add the onion, carrot and celery.

Tuck the bay leaves in beside the ham.

Grind the black peppercorns into the pot with the pepper mill.

Pour in the cold water so everything is covered.
Water · 2,000 ml
Bring the pot to the boil over a high heat.

Skim off the grey foam that rises to the surface with the slotted spoon.


Lower the heat and simmer gently, uncovered, for 2 hours, stirring now and then, until the peas have collapsed and the meat falls from the bone.

Lift the ham hock out of the pot onto the chopping board with tongs.


Throw away the bay leaves.
Pull the meat off the hock with two forks and shred it into rough pieces, pushing the skin, fat and bones to one side.


Throw away the skin, fat and bones.
Stir the ham through the soup and warm it for a minute.


Taste, then season with salt only if it needs it — the ham is already salty.

Skim foam from the boil, shred the ham meat once it falls from the bone, then season carefully—the ham contributes significant salt already.
