Pour the water into the deep saucepan.
Water · 1,500 ml
Add the vinegar.
White wine vinegar · 1 tsp
Bring to the boil, then turn the heat down so the water barely bubbles.

Meanwhile, crack each egg into its own ramekin or cup.
Egg · 4 piece
Put the bread in the toaster, ready to go.
Sourdough bread · 2 slice
Stir the water to make a gentle whirlpool.

Tip the eggs in one at a time, close to the surface.

Poach for 3 minutes, until the whites are set and the yolks are still runny; for firm yolks, keep poaching until the yolks are set. If you're serving anyone pregnant, very young or elderly, use British Lion or pasteurised eggs, or cook the yolks until firm.

Meanwhile, toast the bread until golden.

Butter the hot toast.
Unsalted butter · 15 g

Lift the eggs out with the slotted spoon, dab the bottoms on kitchen paper, and put 2 on each slice.

Add a pinch of salt.
Salt · 1 pinch
Grind over a little pepper and serve straight away.
Ground black pepper · 1 pinch
