Pear · 4 piece
Cut a thin slice off each base so they stand up.

Pour in the wine.
Dry red wine · 500 ml
Pour in the water.
Water · 250 ml
Add the sugar.
Caster sugar · 120 g
Add the cinnamon stick.
Cinnamon stick · 1 piece
Add the star anise.
Star anise · 2 piece
Bring to a simmer, stirring gently around the pears until the sugar dissolves.

Put the lid on slightly ajar and simmer gently for about 25 minutes, turning the pears now and then with the spoon, until a knife slides in easily.

Lift the pears into the serving dish with the slotted spoon.

Boil the liquid hard for about 10 minutes, until reduced to a thin syrup.

Spoon the syrup over the pears, leaving the cinnamon and star anise in the pan, and serve warm or cold, with crème fraîche if you like. The cinnamon stick and star anise are there for flavour; don't eat them.
