Potato Pancakes with Apple Sauce

Lay the apples on the chopping board.
Cooking apples · 600 g
Quarter them and cut out the cores.


Add the water.
Water · 60 ml
Add the sugar.
Caster sugar · 40 g
Add the cinnamon.
Ground cinnamon · 1 tsp
Lay the lemon on the board.
Lemon · 1 piece
Cut the zested lemon in half.


Squeeze the juice into the pan, catching the pips.


Bring to a gentle simmer and cook uncovered for about 15 minutes, stirring now and then, until the apple has collapsed.


Take off the heat and mash with the fork into a thick sauce.


Lay the potatoes on the board.

Grate them coarsely into the large mixing bowl.


Lay the onion on the board.

Cut it in half through the root and peel off the skin.


Grate it coarsely into the potato.


Tip the potato and onion into the sieve set over the sink.

Press down hard with the back of the spoon to squeeze out as much liquid as you can.


Tip the mixture back into the bowl.

Crack in the eggs.

Add the flour.
Plain flour · 30 g
Add 1 teaspoon of salt.
Salt · 1 tsp
Add a pinch of pepper.
Ground black pepper · 1 pinch
Add a pinch of nutmeg.
Ground nutmeg · 1 pinch
Mix firmly with the wooden spoon until evenly combined.


Pour 30 ml of the oil into the large frying pan.
Sunflower oil · 30 ml
Heat over a medium-high heat until shimmering.

Drop in heaped spoonfuls of the batter, well apart, and press each flat to about 1 cm.


Fry without moving for 3–4 minutes, until deep golden and crisp underneath.

Turn each one and press it down lightly.


Fry for 3–4 minutes more, until golden and cooked through.

Lift them with the spatula onto the tray lined with kitchen paper.


Add another 30 ml of oil to the pan.
Sunflower oil · 30 ml
Heat over a medium-high heat until shimmering.

Drop in the next spoonfuls of batter and flatten them the same way.


Fry without moving for 3–4 minutes, until deep golden and crisp underneath.

Turn each one and press it down lightly.


Fry for 3–4 minutes more, until golden and cooked through.

Add them to the tray.


Add another 30 ml of oil to the pan.

What you’ll doYou will make apple sauce first by cooking apples with sugar, cinnamon and lemon until collapsed, then mash to a smooth pulp. While that cools, you'll grate potatoes and onion, squeeze out their liquid, mix with eggs, flour and spices to form a batter. You'll then fry the batter in three batches, pressing each spoonful flat and cooking both sides until golden and crisp, before serving with the apple sauce.
