Pound Cake
Dense, buttery pound cake made with equal parts butter and eggs, finished with vanilla extract for subtle floral notes.

Set the oven to 170 °C and allow it to come fully up to temperature.

Line the base and long sides of a 900 g (2 lb) loaf tin with a strip of baking paper, leaving an overhang on each side to help with lifting later.


Put the butter into the large mixing bowl, making sure it is at room temperature and soft enough to beat.

Beat the butter and sugar together on high speed for about 5 minutes, scraping down the sides halfway through, until the mixture is very pale, light and fluffy.


Add the vanilla extract to the creamed mixture.

Crack the eggs one at a time into a small bowl, discarding the shells.

Add the eggs to the creamed mixture one at a time, beating well after each addition on medium speed until each egg is fully incorporated before adding the next.


Measure the plain flour into a medium bowl.

Add the baking powder to the flour.
Baking powder · 1 tsp
Add the pinch of salt to the flour and baking powder.
Salt · 1 pinch
Whisk the flour, baking powder and salt together in the bowl until evenly combined.


Add the dry mixture to the egg batter in three additions, folding gently with a large wooden spoon after each addition until just combined and no streaks of flour remain — do not overmix.


Scrape all of the batter into the lined loaf tin and use the back of a spoon to level the surface.


Run the offset spatula across the surface of the batter to make it perfectly level and even.


Place the loaf tin in the oven.



Bake for about 60 minutes until the cake is deep golden on top, has pulled away slightly from the sides, and a skewer inserted into the centre comes out clean.



Lift the loaf tin out of the oven using oven gloves and set it on a wire rack.



Leave the cake in the tin for 10 minutes to firm up slightly before turning out.

Lift the cake out of the tin using the baking-paper overhangs and set it the right way up on the wire rack, peeling away the paper.

Leave the cake to cool completely on the rack before slicing.

Using a bread knife, cut the cooled cake into thick, even slices.
