Set the oven to 190 °C and allow it to come fully up to temperature before you bake.

Measure the flour into a large mixing bowl.
Plain flour · 160 g
Add a pinch of salt to the flour.
Salt · 1 pinch
Add the cold butter, cut into small cubes, to the flour and salt.
Unsalted butter · 75 g
Using your fingertips, rub the butter into the flour, lifting and crumbling it until the mixture resembles coarse breadcrumbs with no large lumps of butter remaining.

Scatter the caster sugar over the breadcrumb mixture.

Toss the sugar through the crumbs with a fork until evenly distributed.


Drizzle the ice-cold water over the pastry crumbs a little at a time.
Cold water · 30 ml
Stir with a fork, then press gently with your hands just until the dough comes together into a shaggy ball — do not overwork it.


Flatten the dough into a disc, wrap it tightly in cling film, and smooth it into an even round.


Place the wrapped dough in the refrigerator to chill.


Leave the dough to rest and firm up in the refrigerator for at least 30 minutes.

Take the dough out of the refrigerator and unwrap it onto a lightly floured surface.

Roll the chilled dough out on a lightly floured board into a circle about 3 mm thick and large enough to line a 20 cm pie dish with a slight overhang all around.


Carefully lift the pastry over the rolling pin and drape it into the pie dish, pressing it gently into the base and sides without stretching, then trim the overhang to about 1 cm and crimp the edge between your fingers.


Prick the base all over with a fork to prevent it puffing up during blind baking.


Press a sheet of baking paper into the pastry case so it covers the base and sides.


Fill the paper with baking beans, spreading them into the corners so the sides are supported.

Slide the pie dish into the oven to blind bake the pastry case.



Bake for 15 minutes until the pastry edges are set and just beginning to colour.


Remove the pie dish from the oven using oven gloves, then lift out the baking paper and beans.



Return the pie dish to the oven for the base to dry out.



Bake for a further 5 minutes until the base looks dry and pale golden.


Lift the pie dish out of the oven using oven gloves and set it aside to cool slightly while you make the filling.



Spoon the pumpkin purée into a large bowl.

Add the light brown sugar to the pumpkin purée.

Add the ground ginger.

Add the ground nutmeg.

Add the vanilla extract.

Crack the 2 eggs into the bowl, discarding the shells.

Pour the double cream into the bowl.

Pour the whole milk into the bowl.

Whisk everything together thoroughly until completely smooth, the sugar is dissolved and the spices are evenly distributed throughout the custard.


Pour the smooth pumpkin filling into the par-baked pastry case, letting it settle level.

Turn the oven down to 175 °C, then carefully slide the filled pie dish back in.



Bake for 45 minutes, or until the filling is set at the edges but still has a slight wobble in the very centre when you gently shake the dish.


Using oven gloves, take the pie dish out of the oven and set it on a wire rack.



Leave the pie to cool completely at room temperature — the filling will firm up fully as it cools, which takes at least 2 hours.

Cut the cooled pie into 4 equal wedges with a clean, confident stroke of the knife.
