Tip the quinoa into a fine-mesh sieve.

Hold the sieve under cold running water and rinse the quinoa, swirling it with your fingers, until the water runs clear.

Pour the water over the quinoa in the saucepan.

Add a half-teaspoon of salt to the pan.

Bring the quinoa and water to a full boil over high heat.

Turn the heat down to its lowest setting so the quinoa barely simmers.

Place the lid on the saucepan.


Simmer the quinoa, undisturbed, until all the water has been absorbed and the grains show their little white tails.

Lift the lid off the saucepan and set it aside.

Leave the quinoa to cool completely in the pan, fluffing it once with a fork after five minutes to separate the grains.


Peel the red onion, removing the papery skin and halving it through the root.

Finely chop the peeled onion into small, even dice.


Scrape the chopped onion into a large bowl.

Peel the garlic clove, pressing it flat with the side of the knife to slip off the skin.

Mince the peeled garlic clove as finely as possible, rocking the knife over it until it is almost a paste.


Scrape the minced garlic into the bowl with the onion.

Halve the cucumber lengthways.

Run a teaspoon along the centre of each cucumber half to scoop out the watery seeds and discard them.


Cut the deseeded cucumber halves into small, even dice.


Tip the diced cucumber into the bowl.

Halve the red bell pepper through the stalk and cut away the stalk, white ribs and seeds, discarding them.
