Put the unpeeled potatoes in the large saucepan.
Waxy potatoes · 1,000 g
Cover with 2 litres of cold water.
Water · 2,000 ml
Bring to the boil.

Boil for about 10 minutes, until a skewer goes in at the edge but meets resistance in the middle.

Leave to cool completely, at least an hour, or overnight in the fridge.

Pull off the skins with your fingers.

Grate the potatoes on the coarse side of the box grater into the large bowl.

Scatter over the salt.
Salt · 1 tsp
Add a pinch of pepper and toss gently with your hands.
Ground black pepper · 1 pinch
Put half the clarified butter in the large frying pan.
Clarified butter · 30 g
Heat over a medium heat until hot.

Tip in the potato, spread it to the edges and press it down firmly with the spatula into a tight cake.

Cook undisturbed for about 12 minutes, until the underside is deep golden and the cake holds together; lift an edge with the spatula to check.

Slide the rösti out onto the flat plate, golden side down.

Add the rest of the clarified butter to the pan and let it heat.
Clarified butter · 30 g
Wearing oven gloves, turn the plate over the pan so the rösti drops back in, uncooked side down.

Cook for about 10 minutes more, until golden and tender in the middle when pierced with a skewer.

Rösti
Rösti is a crispy Swiss potato cake made from shredded waxy potatoes and clarified butter, golden and tender throughout.
What you’ll doYou will par-boil whole potatoes until barely tender, cool them completely, then peel and coarsely grate them into a bowl. Season the grated potato, heat clarified butter in a frying pan, spread the potato in an even layer, and press it down firmly to form a cake. Cook the first side over medium heat until deep golden and holding together, then flip it onto the second side using a plate as an aid, and cook until that side is equally golden and the centre yields to a skewer.
