Roast Leg of Lamb
A bone-in leg of lamb, scored and studded with garlic and rosemary, coated in a mustard, lemon, and olive oil paste, then roasted until deeply browned on the outside and tender through. The pan drippings become a skimmed, winey pan gravy. This is a centrepiece for a long, unhurried lunch — substantial, aromatic, and built for sharing among six.

Preheat
Peel a garlic clove the 6 garlic cloves
Strip the 2 fresh rosemaries
Add olive oil
Add dijon mustard
Score the room-temperature lamb
Stuff the sliced garlic slivers, chopped rosemary and scored lamb

Add the lemon zest to the mixing bowl
Add the lemon juice to the mixing bowl
Add the flaked sea salt to the mixing bowl
Add black pepper
Mix the lemon and dijon mustard mixture
Add the mustard-coated lamb from the mixing bowl to the roasting tin

Add the dry white wine to the roasting tin
Add the lamb stock to the roasting tin
Roast the lamb with braising liquid

Rest the roasted leg of lamb
Skim the roasted leg of lamb
Bring the skimmed pan juices to a boil
Reduce the simmering pan juices

Add black pepper
