Salmon Teriyaki
Salmon glazed with soy sauce, sake, and mirin, topped with sesame seeds, garlic, and spring onions. Serves 4.

Pour the soy sauce into a small bowl.
Soy sauce · 80 ml
Add the mirin to the bowl.

Add the sake to the bowl.
Sake · 60 ml
Add the caster sugar to the bowl.

Scrape the skin off the ginger with the edge of a teaspoon or a peeler.
Fresh ginger · 10 g

Grate the peeled ginger on a fine grater directly into the bowl with the sauce ingredients.


Crush each garlic clove under the flat of a chef's knife and slip off the skin.
Garlic · 2 clove

Mince the peeled garlic cloves as finely as you can.


Scrape the minced garlic into the bowl with the sauce.

Add the sesame oil to the bowl.

Stir everything together until the sugar has dissolved.


Lay the salmon fillets skin-side up in a large shallow dish.

Pour the teriyaki marinade over the salmon, turning the fillets to coat them all over.

Cover the dish tightly with cling film.


Place the dish in the refrigerator.


Leave the salmon to marinate for at least 30 minutes, turning once halfway through.

Peel the cling film off the dish and discard it.


Lift the salmon fillets out of the marinade onto a plate, letting the excess drip back into the dish; reserve the marinade.

Add the oil to a large frying pan.

Set the pan over a medium-high heat and warm the oil until it shimmers.

Lay the salmon fillets skin-side down in the hot oil.

Press the fillets gently flat with a spatula and cook without moving them until the skin is deeply golden and crisp and the flesh has turned opaque two-thirds of the way up the sides.


Flip each fillet carefully onto its flesh side.


Pour the reserved marinade into the pan around the salmon.

Bring the marinade to a full boil, as it has held raw fish, then let it bubble and reduce, tilting the pan and spooning the glaze over the salmon repeatedly until it thickens to a shiny coating and the fish is just cooked through.

Trim the roots and any ragged dark tips from the spring onions.

Salmon Teriyaki

What you’ll doYou will make a teriyaki marinade by combining soy sauce, mirin, sake, sugar, grated ginger, minced garlic and sesame oil, then marinate salmon skin-side up for at least 30 minutes. After marinating, you will sear the fillets skin-side down in a hot pan until the skin crisps, flip them, then reduce the reserved marinade in the pan, spooning it over the fish until it forms a shiny glaze and the flesh is cooked through. Finally you will plate the salmon and top it with sesame seeds and sliced spring onions.
