Pour the water into a large saucepan.

Bring the water to a full rolling boil over high heat.

Add the salt to the boiling water and stir briefly to dissolve.

Peel the garlic cloves.

Mince the peeled garlic cloves as finely as possible.


Trim and peel the spring onions, removing the outer layer and root ends.

Slice the spring onions thinly on the diagonal.


Transfer the sliced spring onions to a mixing bowl.

Measure the soy sauce into a small bowl.

Add the sesame oil to the soy sauce.

Pour the sesame oil and soy sauce mixture over the minced garlic and stir together to make the dressing.

Place the spinach in a colander and rinse thoroughly under cold running water.

Add the rinsed spinach to the boiling salted water.

Blanch the spinach for about 1 minute, stirring once, until just wilted and bright green.

Drain the blanched spinach through the colander.

Transfer the drained spinach to a medium bowl.

Pour enough cold water over the spinach to submerge it and cool it quickly.

Place the bowl of spinach and cold water in the refrigerator.


Chill the spinach in the cold water until completely cooled.

Remove the bowl from the refrigerator.


Drain the chilled spinach through the colander, discarding the water.

Take the spinach in both hands and squeeze it firmly to press out as much water as possible.

Chop the squeezed spinach roughly into 3–4 cm lengths.


Transfer the chopped spinach to the mixing bowl with the spring onions.

Pour the sesame dressing over the chopped spinach and spring onions.

Toss everything together thoroughly until the spinach is evenly coated in the dressing.
