Spotted Dick
Traditional baked suet pudding studded with currants and brightened with lemon zest. Serves 4.

Heat the oven to 180 °C.

Line a 900 g loaf tin with baking paper, pressing it into the corners.


Tip the self-raising flour into a large mixing bowl.
Self-raising flour · 175 g
Add the shredded suet to the bowl.
Shredded beef suet · 85 g
Add the caster sugar to the bowl.
Caster sugar · 75 g
Add the currants to the bowl.
Currants · 150 g
Finely grate the zest of the lemon directly into the bowl over the dry ingredients.
Lemon · 1 piece

Stir everything together until the suet, sugar, currants and zest are evenly distributed through the flour.


Pour the milk into the bowl.
Whole milk · 90 ml
Stir with a wooden spoon, then bring the mixture together with your hands into a soft, slightly sticky dough — stop as soon as no dry flour remains.


Tip the dough into the lined tin and press it out evenly with your knuckles to fill the corners.

Slide the tin into the oven and bake for 40 minutes, until the top is golden and a skewer inserted into the centre comes out clean.




Lift the tin out of the oven using oven gloves and set it on a wire rack.



Leave the pudding to cool in the tin for 5 minutes so it firms up enough to slice cleanly.

Run a palette knife around the edges, then invert the pudding onto the board and peel away the baking paper.
