Tip the glutinous rice into the large bowl.
Glutinous rice · 400 g
Cover generously with 1 litre of cold water.
Water · 1,000 ml
Leave to soak for at least 4 hours, or overnight in the fridge, until the grains are opaque.

Rinse under cold running water, stirring gently with your hand, until the water runs clear.

Pour 200 ml of water into the medium saucepan.

Add the coconut milk.

Add the sugar.

Add the salt and stir until dissolved.

Bring to the boil over a medium-high heat, stirring once or twice.


Turn the heat to its lowest and put the lid on.


Cook for 18 minutes without lifting the lid, until the liquid is absorbed and the grains are tender and glossy.

Take off the heat and leave to rest, still covered, for 5 minutes.

Lift off the lid and run the fork gently through the rice.

Sticky Coconut Rice
Glutinous rice cooked in coconut milk until sticky and tender, a Southeast Asian dessert served warm or at room temperature.
What you’ll doYou will soak glutinous rice for at least four hours until opaque, then rinse it thoroughly. You'll heat coconut milk with water, sugar and salt until dissolved, add the rice, bring it to a rolling boil, then cook covered on the lowest heat for eighteen minutes without lifting the lid. After resting for five minutes off the heat, you'll separate the grains gently with a fork and serve.
