Sticky Toffee Pudding
Rich sponge made with dates and black treacle, served with a warm toffee sauce of butter, dark muscovado sugar and double cream.

Turn the oven to 180 °C and leave it to come up to heat while you prepare the pudding.

Line the base and sides of a 20 cm square baking dish with baking paper.


Tip the Medjool dates onto the chopping board.

Pull the stone from each date with your fingers, discarding the stones, until all are pitted.

Roughly chop the pitted dates into small pieces.


Measure the water into a small saucepan.

Tip the chopped dates into the saucepan with the water.

Bring the dates and water to the boil over a medium heat, stirring occasionally, until the dates have softened and absorbed most of the liquid.

Remove the pan from the heat, stir in the bicarbonate of soda and watch it foam up — stir it through until combined.

Set the date mixture aside and leave it to cool for about 10 minutes until it is no longer hot.

Put the butter into a large mixing bowl.

Add the caster sugar to the butter.

Beat the butter and sugar together vigorously until the mixture is pale, fluffy and noticeably increased in volume.


Crack the eggs one at a time into the bowl, beating well after each addition until fully incorporated.

Add the vanilla extract and stir it through.

Spoon in the black treacle and beat until evenly combined and the mixture has a rich dark colour.
Black treacle · 1 tbsp
Tip the self-raising flour into the bowl over the batter.

Pass the flour through a sieve held over the bowl, shaking it gently so it falls in a fine, even layer over the batter.


Fold the flour into the batter with a large wooden spoon, using gentle cutting strokes until just combined and no streaks of flour remain.


Pour the cooled date mixture into the batter.

Fold the dates through the batter with the wooden spoon until evenly distributed — the mixture will be soft and slightly loose.


Pour the batter into the prepared dish and spread it level with the back of the spoon.


Place the baking dish in the oven.



Bake for 30 minutes until the sponge is risen, firm to the touch in the centre, and a skewer inserted comes out clean.


Lift the baking dish out of the oven using oven gloves and set it on a heatproof surface.



Put the butter for the toffee sauce into a clean small saucepan.

Pour the double cream into the pan.

Set the pan over a medium heat and stir constantly until the butter has melted and the sugar has dissolved completely.

Let the sauce bubble, stirring frequently, for 2 minutes until it thickens slightly and turns a deep glossy toffee colour.

Pour the hot toffee sauce evenly over the surface of the warm sponge in the dish, letting it pool into the edges.

Sticky Toffee Pudding

What you’ll doYou will pit and chop dates, then soften them in water with bicarbonate of soda. Whilst they cool, cream butter and sugar until pale and fluffy, beat in eggs one at a time, then fold in sieved flour and the date mixture. Bake for 30 minutes until a skewer comes out clean. Whilst the pudding rests, melt butter, sugar and cream together over medium heat, stirring constantly, until it reaches a deep toffee colour. Pour the hot sauce over the warm sponge and serve.
