Lay the onion on the chopping board.

Cut it in half through the root and peel off the skin.


Lay the red pepper on the board.

Cut out the core and seeds and cut it into 2 cm pieces.


Lay the green pepper on the board.
Green pepper · 1 piece
Lay the garlic on the board.
Garlic clove · 3 clove
Crush each clove lightly with the flat of the knife and pull off the skin.


Lay the ginger on the board.
Fresh ginger · 5 g
Scrape off the skin with the edge of the spoon, trimming any knobbly bits with the knife.


Pour the rice vinegar into the small saucepan.
Rice vinegar · 120 ml
Add the ketchup.
Tomato ketchup · 80 ml
Add the pineapple juice.
Pineapple juice · 60 ml
Add the sugar.
Caster sugar · 3 tbsp
Add the soy sauce.
Light soy sauce · 2 tbsp
Put 2 tablespoons of the cornflour in a fourth small bowl.
Cornflour · 2 tbsp
Stir in the cold water until smooth.
Cold water · 2 tbsp

Bring to a simmer, whisking until the sugar dissolves.


Whisk in the slurry and simmer for a minute until thick and glossy, then take off the heat.


Lay the pork shoulder on the board.
Pork shoulder · 500 g
Add the salt.
Salt · 1 tsp
Add the white pepper.
Ground white pepper · 0.5 tsp
Break in the egg and stir until every piece is coated.

Spread 7 tablespoons of cornflour on the tray.
Cornflour · 7 tbspAdd the flour and mix with the fork.
Plain flour · 4 tbsp
Pour 800 ml of the oil into the large deep saucepan; it should come no more than a third of the way up.
Vegetable oil · 800 ml
Heat over a medium-high heat until it reads 170 °C.


Shake off the excess coating and lower in half the pork.


Fry for about 4 minutes, until pale golden and cooked through.


Fry it the same way.


Turn up the heat until the oil reads 190 °C.


Fry for about 90 seconds, turning with the slotted spoon, until deep golden and crunchy and the thickest piece reads 63 °C on a thermometer.


Set the oil aside off the heat; once it is completely cold, strain it for reuse or throw it away.

Pour 2 tablespoons of oil into the wok.

Heat over a high heat until it shimmers.

Stir-fry for about 2½ minutes, until just softened.


Stir-fry for 30 seconds.


Add the drained pineapple chunks.

What you’ll doYou will simmer a sauce of rice vinegar, ketchup, pineapple juice, sugar and soy and thicken it with a cornflour slurry. Coat cubes of pork shoulder in egg, then cornflour and flour, and fry them in two batches at 170 °C, then all together at 190 °C until crunchy. Stir-fry onion, peppers, garlic and ginger with pineapple, add the sauce, toss in the pork and serve at once.
