Set the oven to its highest temperature, at least 240 °C, and allow it to heat fully.

Lay the chicken leg quarters on the chopping board.

Cut two or three deep slashes through the skin and flesh of each leg quarter, right down to the bone, so the marinade can penetrate.


Transfer the slashed chicken pieces into the large bowl.

Squeeze the lemon firmly over the citrus juicer to extract all its juice into the small bowl.

Sprinkle the salt over the chicken in the bowl.

Pour the lemon juice over the chicken and salt.

Use your hands to rub the salt and lemon juice all over the chicken and deep into the slashes.

Press each garlic clove flat with the side of the knife to loosen the skin, then peel and discard the skins.

Scrape the skin off the ginger with the edge of the peeler.

Roughly chop the peeled ginger into small chunks so the blender can grip them easily.


Scrape the chopped ginger into the small bowl.

Sweep the peeled garlic cloves into the small bowl with the ginger.

Spoon the yogurt into the medium bowl.

Add the sweet paprika to the yogurt.

Add the ground cumin to the bowl.

Add the ground coriander to the bowl.

Add the ground turmeric to the bowl.

Add a pinch of red food colouring to the bowl to deepen the colour of the marinade.

Add the ground black pepper to the bowl.

Add the remaining salt to the bowl.

Pour the neutral oil into the bowl.

Tip the chopped ginger and peeled garlic cloves into the medium bowl with the yogurt and spices.

Blend everything in the bowl with the immersion blender until you have a completely smooth, vivid red marinade with no visible pieces of garlic or ginger.


Pour the tandoori marinade over the chicken in the large bowl.

Use your hands to work the marinade thoroughly into every surface of the chicken and deep into each slash, coating the pieces completely.

Stretch a sheet of cling film tightly over the bowl.


Place the covered bowl in the refrigerator.


Leave the chicken to marinate in the refrigerator for at least 8 hours, or overnight, so the spices penetrate to the bone.

Peel the cling film off the bowl and discard it.


Line a large baking tray with baking paper.


Lift the marinated chicken pieces out of the bowl and arrange them on the lined baking tray in a single layer, skin side up.

Slide the tray into the oven.



Roast the chicken for 25 minutes, until the marinade is charred at the edges and the juices run clear when you pierce the thickest part of the thigh. Check the thickest piece reads 74 °C on a thermometer.



Pull the tray out of the oven using oven gloves and set it on a heatproof surface.



Drop the butter into the small saucepan.

Set the saucepan over a low heat and swirl it gently until the butter is completely liquid.

Brush the melted butter generously over each piece of chicken, making sure to get into the slashes.


Peel the red onion and discard the papery skin.

Cut the peeled red onion as finely and evenly as you can into thin half-moon strips.


Cut the remaining lemon in half through its equator.

Lift the basted chicken pieces onto a large serving platter.
Scatter the sliced red onion rings over and around the chicken.
Tuck the 2 lemon halves alongside the chicken on the platter for squeezing at the table.
