Tip the jasmine rice into a medium saucepan.
Jasmine rice · 320 g
Pour in the cold water.
Water · 600 ml
Bring the water to a full boil over high heat, then stir once.

Lay the lid on the saucepan.

Reduce the heat to its lowest setting and cook, undisturbed, until the rice has absorbed all the water.

Peel the yellow onion
Yellow onion · 150 g

Halve the peeled onion through the root, then slice each half into thin half-moons.


Transfer the sliced onion to the large saucepan.

Crush each garlic clove flat with the side of the knife, then slip off the skin.
Garlic · 4 clove

Finely chop the peeled garlic cloves.


Scrape the chopped garlic into the saucepan with the onion.

Peel the ginger with a peeler.
Fresh ginger · 20 g

Finely chop the peeled ginger into very small pieces.


Add the chopped ginger to the saucepan.

Peel away the tough outer leaves of the lemongrass, cut off the dry top and root end, then bash the stalk with the flat of the knife to bruise it.
Lemongrass stalk · 2 piece

Add the bruised lemongrass stalks to the saucepan.

Add the coconut oil to the saucepan.
Coconut oil · 2 tbsp
Cook over medium heat, stirring regularly, until the onion is soft and translucent and the garlic and ginger are fragrant.


Add the yellow curry paste to the pan.

Stir the paste into the aromatics and fry, stirring constantly, until it darkens slightly and smells fragrant.


Pour the coconut milk into the pan, scraping in every last bit.

Pour in the vegetable stock.
Vegetable stock · 250 ml
Tear the kaffir lime leaves lightly and drop them into the pan.

Add the fish sauce.
Fish sauce · 2 tbsp
Add the palm sugar.
Palm sugar · 1 tbsp
Stir everything together until the palm sugar has dissolved into the sauce.


Peel the carrots.
Carrots · 200 g

Cut the peeled carrots on a slight diagonal into slices about 1 cm thick.


Slide the sliced carrots into the curry sauce.

Add the potato cubes to the pan.

Bring to a gentle simmer over medium heat and cook, stirring occasionally, until the potatoes and carrots are just beginning to turn tender.

Break and cut the cauliflower into florets roughly the size of a golf ball, cutting any large florets in half through the stalk.
Cauliflower · 300 g

Add the cauliflower florets to the curry.

Trim the ends off the courgette.
Courgette · 200 g

Cut the courgette into rounds about 1.5 cm thick.


Add the sliced courgette to the pan.

Continue simmering gently, stirring now and then, until all the vegetables are tender when pierced with the tip of a knife and the sauce has thickened slightly.


Juice the 2 limes into the small bowl
Lime · 2 piece

Pour the lime juice into the curry and stir to combine.

Lift the lid off the saucepan and set it aside.

Run a fork through the rice to separate the grains.

- Spoon a mound of fluffy jasmine rice into each serving bowl.
- Ladle the hot yellow vegetable curry generously over the rice, making sure each bowl gets a good mixture of vegetables and sauce.
- Scatter fresh coriander leaves over each bowl to finish. The lemongrass stalk and kaffir lime leaf are there for flavour; don't eat them.

What you’ll doYou will cook jasmine rice separately whilst building an aromatic base of onion, garlic, ginger and lemongrass in coconut oil, then bloom curry paste before adding coconut milk and stock. Once the base simmers gently, you will add carrots and potatoes first, then cauliflower and courgette in sequence as they need different cooking times. At the end you will finish with lime juice, then serve the curry over the rice and scatter with coriander.
