Grate the cucumber into the sieve
Sprinkle the sea salt over the grated cucumber
Rest the salted grated cucumber
Add the greek yoghurt to the medium bowl
Peel the garlic clove
Add the minced peeled garlic to the medium bowl
Finely chop the fresh dill
Add the finely chopped dill to the medium bowl
Add the squeezed grated cucumber to the medium bowl
Drizzle the extra-virgin olive oil over the yoghurt with cucumber
Add the white wine vinegar to the medium bowl
Stir the unmixed tzatziki
Put the bowl in the fridge
Chill the tzatziki
Take the bowl out of the fridge
Transfer the chilled tzatziki from the medium bowl into the serving bowl

Tzatziki

What you’ll doYou will start by salting and draining grated cucumber, then squeezing out the remaining water by hand before folding it into yoghurt along with minced garlic, chopped dill, olive oil, and white wine vinegar. The mixture then goes into the fridge for at least half an hour — the only real waiting point — to let the flavours settle before you spoon it into a serving bowl.
