Put the rice in the large bowl.
Basmati rice · 300 g
Cover with 1 litre of cold water.
Water · 1,000 ml
Soak for at least 30 minutes.

Crumble the saffron into the small bowl.
Saffron strands · 0.25 tsp
Add 4 tablespoons of warm milk and set aside to infuse.
Whole milk · 4 tbsp
Lay the onions on the chopping board.
Yellow onion · 2 piece
Cut them in half through the root and peel off the skins.


Lay the garlic cloves on the chopping board.
Garlic clove · 4 clove
Crush each clove lightly with the flat of the knife and pull off the skin.


Lay the ginger on the board.
Fresh ginger · 25 g
Scrape off the skin with the edge of the spoon, trimming any knobbly bits with the knife.


Lay the chilli on the board.
Green chilli · 1 piece
Lay the 2 tomatoes on the board.
Ripe tomatoes · 200 g
Lay the 2 potatoes on the board.
Waxy potatoes · 300 g
Lay the carrots on the board.
Carrots · 2 piece
Lay the cauliflower on the board.
Cauliflower · 250 g
Pour the oil into the large flameproof casserole.
Vegetable oil · 3 tbsp
Heat over a medium heat.

Add the cumin seeds and let them sizzle for 30 seconds.

Cook for about 10 minutes, stirring, until golden.


Add the garlic, ginger and chilli and stir for a minute.

Add the ground coriander.
Ground coriander · 2 tsp
Add the ground cumin.
Ground cumin · 1 tsp
Add the turmeric.
Turmeric · 1 tsp
Add the chilli powder.
Chilli powder · 0.5 tsp
Add 1 teaspoon of garam masala and stir for 30 seconds.

Add the vegetables and stir to coat.


Stir in the yoghurt.
Plain yoghurt · 150 g
Add 1½ teaspoons of salt.
Salt · 1.5 tsp
Add 60 ml of water.
Water · 60 ml
Cover with the lid.


Simmer for 10 minutes, until the potatoes are almost tender.

Lift the lid and stir in the peas.
Frozen peas · 150 g

Add the lemon juice and take off the heat.

Meanwhile, fill the stockpot with 2 litres of water.
Water · 2,000 ml
Add the cloves.

Add the cardamom pods.

Add the bay leaves.

Add the cinnamon stick.
Cinnamon stick · 1 piece
Add 1 teaspoon of salt.
Salt · 1 tsp
Bring to a rolling boil.

Pour the rice soaking water away.

Add the rice to the boiling water.

Boil for 5 minutes, until the grains are just soft outside but still firm in the middle.

Pick out the bay leaves and cinnamon stick onto a small plate.


Throw them away; the cloves and cardamom stay in, but are not eaten.

Spread the rice over the vegetables in an even layer.


Dot the ghee over the top in small pieces; it melts as the biryani steams.

Sprinkle over the rest of the garam masala.

Lay the mint leaves on the board.

Lay the coriander on the board.

Scatter half the herbs over; keep the other half for serving.

Cover tightly with foil, then the lid.



Cook on the lowest heat for 20 minutes, until the rice is fully tender.

Take off the heat and leave covered for at least 5 minutes.

What you’ll doYou will soak basmati, cook a vegetable curry of potato, carrot, cauliflower and peas with onion, ginger, garlic, spices, tomato and yoghurt, and par-boil the rice in water with whole spices. Spread the rice over the curry, drizzle with saffron milk and ghee, scatter with garam masala and herbs, seal with foil and the lid and steam on the lowest heat for 20 minutes. Serve topped with herbs and crispy onions.
