Yorkshire Puddings
Yorkshire puddings made with plain flour, eggs and whole milk, baked until golden and crispy. Serves 4.

Turn the oven to 230 °C (210 °C fan).

Put the flour in the sieve.
Plain flour · 140 g
Add a pinch of salt.
Salt · 1 pinch
Crack the eggs into the middle.
Egg · 4 piece
Whisk from the middle outwards, drawing in the flour, to a thick smooth paste.


Pour in the milk.
Whole milk · 200 ml
Add the water and whisk until smooth and the consistency of single cream.
Water · 75 ml

While the batter rests, spoon the oil into the holes of a 12-hole Yorkshire pudding tin (holes about 7 cm across), about 1 teaspoon each.
Sunflower oil · 60 ml
Using oven gloves, put the yorkshire pudding tin in the oven.



Heat for 10 to 12 minutes, until the oil is smoking hot.

Using oven gloves, take the yorkshire pudding tin out.



Set the tin on a heatproof surface and quickly pour the batter into the holes, about two-thirds full; it should sizzle.

Using oven gloves, put the yorkshire pudding tin in the oven.



Bake for 20 to 22 minutes, without opening the door, until well risen, deep golden and crisp.

Using oven gloves, take the yorkshire pudding tin out.
