Zucchini Fritters
Crispy zucchini fritters bound with Parmesan and garlic, pan-fried until golden. Serves 4.

Grate the courgettes on the coarse side of the box grater directly onto the board.


Tip the grated courgette into the colander set over the sink.

Toss the grated courgette with the salt so every strand is coated.

Leave the courgette to stand for 10 minutes so the salt draws out the moisture.

Gather the courgette in your hands in batches and squeeze hard until almost no more liquid runs out, letting it fall away.

Put the squeezed courgette into the large mixing bowl.

Peel the garlic cloves and discard the skins.

Mince the peeled garlic cloves as finely as you can.


Scrape the minced garlic into the bowl with the courgette.

Finely chop the parsley leaves and tender stalks.


Add the chopped parsley to the bowl.

Finely grate the Parmesan onto a small plate.

Tip the grated Parmesan into the bowl, then crack in the eggs, discarding the shells.

Add the flour to the bowl.
All-purpose flour · 80 g
Add the remaining salt to the bowl.

Add a pinch of black pepper to the bowl.

Stir everything together firmly until you have a uniform, thick batter with no pockets of dry flour.


Pour half the olive oil into the large frying pan.
Extra-virgin olive oil · 30 ml
Set the pan over a medium-high heat and warm the oil until it shimmers.

Drop heaped spoonfuls of batter into the hot oil, pressing each one gently into a flat round about 1 cm thick, fitting as many as the pan allows without crowding.


Cook undisturbed until the undersides are deep golden and the edges look set, about 3 minutes.

Slide a spatula under each fritter and turn it firmly in one motion.


Cook the second side for a further 3 minutes until equally golden and cooked through.

Lift the finished fritters onto a plate lined with kitchen paper to drain briefly.


Add the remaining olive oil to the pan.

Spoon in the remaining batter and press each portion into flat rounds as before.


Cook undisturbed for 3 minutes until the undersides are golden and the edges are set.

Flip each fritter with the spatula in one confident motion.


Cook for a further 3 minutes until both batches are evenly golden and cooked through.

Zucchini Fritters

What you’ll doYou will grate courgettes, salt them to draw out moisture, then squeeze them dry. Mix the drained courgette with garlic, parsley, Parmesan, eggs and flour into a thick batter. Fry spoonfuls of batter in two batches over medium-high heat, flipping once each side is golden, until all fritters are crisp and cooked through.
